Fresh Cherry Rava kesari is a south Indian dessert made with dry roasting semolina in ghee along with some cashews, raisins and mixing it with boiling water, sugar, cardamom. Love the color ,taste and texture of this recipe.

1 cup roasted semolina/sooji
-Dry roast in a table spoon of ghee on a medium to low heat.Stirring occassionally & until it is fragrant.
1/2 cup deseeded fresh cherries
2-3 tbsp Ghee
2 tbsp cashews and raisins (Roast them in a tbsp of ghee and set aside for garnish)
pinch of cardamom
2 and 1/2 cups of water
1)Heat a pan with cherries, sugar and sauté until cherries are soft then add water bring it to a boil.
2)Add cardamom powder, roasted semolina, nuts and mix well continuously until no lumps formed.
3)Cook it covered on low flame until water evaporates. Add 2 tbsp. of ghee on top. Turn off the heat and serve warm.
