Traditional Arancini is made using Arborio rice but this is my take on low carb version using cauliflower rice.
Healthy and delicious Cauliflower rice arancini is made using sautéed cauliflower rice along with Italian seasoning, cheese and rolled in egg wash and bread crumbs .Air fried until golden and crispy. It is served with marinara sauce as an appetizer or as light dinner along with some soup.
1 cup Homemade Riced cauliflower or store bought riced cauliflower
2-3 green chilies
3-4 Garlic cloves
1 tbsp. Italian seasoning
1/2 tsp Ground black pepper
1 tsp paprika
salt to taste
1/4 cup mozzarella cheese
1/4 parmesan cheese
1 tbsp. Basil Pesto (optional)
1 cup Italian herb seasoned bread crumbs
-In a food processor add roughly chopped cauliflower along with green chilies and garlic and pulse until to get the desired consistency of riced cauliflower.
-Heat a skillet with a few drops of oil and sauté cauliflower rice for about 4-5 mins until soft.
-Add all the seasoning ingredients and mix well until the cheese melts. Switch off the stove and Set aside.
-Allow it to cool for few mins and then using an ice cream scoop make round ball and place them on the baking tray.
-Preheat air fryer to 400F and dip each cauliflower ball into the egg mixture and roll into the breadcrumbs and place them onto the baking tray.
-Once air fryer is preheated place the cauliflower arancini ball into the air fryer basket for 15mins.Use cooking oil spray to coat the balls evenly.
-Turn the balls occasionally and fry until golden and crispy.
-Serve it with some warm marinara sauce and some fried basil leaves.
