Chitti Kajalu is Andhra sweet it is quick and easy to prepare using all purpose flour, butter to form a dough deep fried to golden brown and dipped in sugar syrup flavored with cardamom.
1 cup all purpose flour
2 tsp melted butter or ghee
pinch of salt
water required to need the dough.
For Sugar syrup
1 cup sugar
1/2 cup water
pinch of cardamom
-Add all the ingredient in a pot and melt sugar until 1 string consistency is achieved.
Melted butter for greasing
Oil for frying
-Mix all the ingredients in a bowl and knead to form a stiff dough. Allow the dough to rest for 15mins.
-Then divide the dough in 2 equal parts and roll into a thin flat sheet.
-Grease the sheet with butter and cut into thin stripes ,roll each stripe and seal the edges. set aside.
-Follow the procedure for rest of the dough.
-Take a heavy bottom vessel and heat oil for frying the kaja until golden brown.
-Add the hot kajalu into sugar syrup. Coat all the fried mini kaja in sugar syrup.
-Serve it hot and enjoy.
