Oats Quinoa Dosa fibre rich nutrient dense dosa is prepared using oats,quinoa and lentils soaked for 3-4 hrs and blend it to form a pour able batter consistency.No fermentation is required. Serve hot with some coconut chutney or ginger chutney.
Ingredients for batter:
3/4 cups rolled oats
1/4 cup rice (optional)
1/4 cup quinoa
1/2 cup mixed lentils(chana dal,urad dal,toor dal,moong dal)
small piece ginger
3-4 green chilies
1/4 cup of fresh cilantro
1 tsp cumin seeds
Garnish:
1/4 cup grated carrot
1/4 cup grated beetroot
1/4 cup grated zucchini
1 small onion finely chopped
Procedure:
-In a large bowl soak rice, quinoa, dal in water for 3-4 hours.
-Once soaked wash thoroughly and grind all the ingredient along with oats, ginger, chilies, cilantro, cumin seeds by adding water into a smooth paste.
-Adjust consistency of batter by adding water.
-Heat a cast iron pan or non stick pan once it is hot enough add one laddle of batter spread it into round shape crepe.Garnish with shredded carrot,beetroot,zuchini,onion.
-Add few drops of oil and allow it roast on both sides.
-Serve hot with some coconut chutney or ginger chutney.
