Baked Malai kofta

Baked Malai kofta is a potato & paneer dumpling prepared using boiled potatoes,paneer or tofu and seasoned with indian spices.Along with onion,tomato gravy.Serve hot with some roti or naan.

Step 1:Ingredients for Kofta:
1 large boiled potato
1/4 cup of grated paneer or tofu
1 tbsp finely chopped green chilies
1 tsp shahi paneer masala
pinch of turmeric pinch of salt
1 tbsp finely chopped cilantro
1 tsp roghly chopped cashews
1 tsp raisins

-In a large mixing bowl combine all the ingredients.Mix well and,using greased hands form 8-12 kofta balls.

Step 2:Ingredients for  sauce
1 large diced onion
2-3 medium tomato’s finely chopped
1 tbsp ginger garlic paste
1 tbsp shahi paneer masala
1/2 tsp red chili powder
7-10 whole cashews
1tsp coconut palm sugar
salt to taste
1 tbsp oil

Instant pot method or pressure cooker:
-Press sautee button when it is hot add oil diced onion,ginger garlic paste and fry from few mins.
-Then add rest of the ingredients fry until tomatoes are soft.
-add about 1/4 cup of water,cancel the sautee button.
Close the lid and pressure cook for 3 mins.
-Allow it to naturally release the pressure.
-Allow the mixture to cool down and then blend it to a fine paste.

Garnish:
-1 tsp dry methi leaves
-Cream(optional)
for dairy free option use coconut cream

Procedure:

-Preheat the oven to 400F grease the baking tray and koftas(step 1) with oil.
-Bake for about 10-15 mins by turning them occasionally on both sides.
-From step 2 bring the sauce to a boil ,garnish with dried methi leaves and place the kofta’s in the sauce just before serving.
