Mushroom lentil soup

Perfect soup during winter.I am a great fan of soups during winters it is my favourite lunch to work.The best part about it is a one pot meal not having to spend alot of time in kitchen.Just throw whatever vegetables you like and some protein(lentils  or beans).Thats it your lunch or dinner is ready in less than 30 minutes.

Lately i am love with this mushroom lentil soup and how great it tastes with simple ingredients.Hope you guys would love it as much as i do.

Prep time:5mins
cook time:15mins
Serves 4-6

Ingredients
1 medium onion finely chopped
1 Jalapeno finely chopped
1/2 cup brown lentils
3 cups Organic portobello mushrooms thinly sliced
2 medium size tomatoes finely chopped
3-4 cups water or vegetatable broth
1 tsp avocado oil

For seasoning
3-4 cloves minced garlic
salt to taste
1 tsp dry parsley
1 tsp dry thyme leaves
1/2 tsp cumin powder
1/2 tsp turmeric
1 tsp red chili flakes
1 tsp ground pepper

Procedure:
-In a Instant pot press sautee button add oil, onion and all the seasonings sautee for few mins.
-Add mushroom,lentils and fry for few more minutes.Finally add tomatoes and water or broth.
-Close the lid and press the soup button and set the timer for 15 mins.
-Allow the pressure to release naturally and serve hot in a bowl.

Notes:

-If you don’t have an instant pot you can follow the same recipe on a stove top or pressure cooker.
