Stuffed baby eggplant curry

Baby eggplant is a popular andhra curry.It is  prepared by stuffing homemade curry powder and cooked until soft/tender.Serve this curry as a side for steamed rice or quinoa along with some rasam or sambar.

Prep time:10 mins
cook time:25-30mins
Serves 3-4

Ingredients:
6-10 Tender baby eggplant-Wash cut(make incision at the center as show below).soak in salt water until you use it.
salt to taste
1/2 tsp garam masala powder
pinch of turmeric
2 tbsp oil
water as needed

Ingredients for curry powder:
5-6 dry red chilies
3 tbsp coriander seeds
1 tbsp urad dal
1 tbsp Chana dal
1/2 tsp cumin seeds
5-6 cloves of garlic
1/2 tsp oil

-Heat a pan on medium low heat add oil and add all the ingredients and roast until golden brown and fragrant.Allow the mixture to cool and In a blender make it to fine powder set aside.

Procedure for curry:
-Take the curry powder+add garam masala+salt+water form into a paste.Set aside.
-Now take the baby eggplant and stuff it with the curry powder paste.Similarly follow the same process for all the eggplants.
-Heat a pan with oil on medium flame and add all the stuffed eggplants.Cook it covered while stirring occasionally for about 20-30 mins.
-Once eggplants are tender remove from heat and serve hot with some steamed rice and rasam/sambar.

Notes:
-Add water to curry powder to form a paste.Stops the spices from burning while cooking.
