Rice Pudding

Indian Rice pudding is prepared by cooking rice in milk and seasoned with ghee fried cashew ,raisins along with freshly ground cardamom.
Perfect gluten free dessert,delicious and easy to make.

Prep Time:5mins
Cook time:60mins or Instant pot cook time:20mins

Ingredients:
1/2 cup short grain rice
6 cups full fat milk
1/4 cup sugar or Jaggery
1/2tsp cardamom powder

For Garnish
1 tbsp ghee
5-6 whole cashews
1-2 tbsp raisins
-Heat a pan on add ghee ,cashews, raisins fry until cashews are slightly golden brown and raisins are puffed up.

Procedure:
-In a heavy bottom vessel add milk and rice bring it to a bring.Reduce heat and simmer until milk is reduced to half and rice is tender.
-Add Sugar or jaggery along with fried cashew and raisins,cardamom stir until sugar dissolves about 2-3 mins.
-Transfer into a serving bowl and enjoy.

Instant Pot method: Instant Pot that i use
-If you have an instant pot add all the ingredients to the pot and press porridge button.
-It will finish in 20mins.Allow it to naturally release pressure.
-Serve it in a serving bowl

Notes:
To make this dairy free add coconut milk and follow the same procedure.
