Mushroom peas pulav is prepared by sautéing mushroom , peas in ghee and cooked along with long grain basmati rice seasoned with whole Indian spices. It is mild and fragrant pulav . Serve with some mint cucumber raita or plain yogurt.

Ingredients:
1 Cup Basmati rice (wash thoroughly until water runs clear and set aside)
1 cup chopped mushrooms
1/2 cup fresh peas
4 green chilies finely chopped
1 medium onion finely chopped
1 tbsp ghee(Clarified butter)
Salt to taste
2 cups water
For garnish:
6-8 roasted cashews
2 tbsp finely chopped Cilantro
For Seasoning(Dry spices):
1 black cardamom
2 bay leafs
3 cloves
1 small piece cinnamon stick
1 tsp cumin seeds
1 tsp fennel seeds
Procedure:
-In a heavy bottom pot pan with ghee and fry all the dry spices until fragrant.
-Add chopped onion, green chilies, salt and fry until onion are soft.
-Add mushrooms, peas fry for few mins later we will add rice fry for few more mins.
-Cook rice with 2 cups of water. Bring it to boil and cover the pot with a lid cook slowly until rice is soft.
-Turn off the stove. Allow the pulav to rest for few mins .Garnish with cashews and cilantro. Serve hot with raita or plain yogurt.
