Double ka meetha(Bread pudding)

My take on hyderabad famous sweet double ka meetha(Bread pudding) .It is prepared by  soaking crispy bread pieces in sugar syrup and top it up with saffron and cardamom flavored milk.Garnish it with chopped nuts.Wonderful dessert for any festivals or occasions.

Prep time:10mins
Cook time:30-40 mins
Serves -4-5

Step 1:Ingredients:
2 cups full fat milk
Pinch of saffron
Pinch of cardamom powder

Procedure for milk:

-In a heavy bottom vessel add milk bring it to a boil and reduce to low flame cook until milk is half the quantity.Add saffron strands and cardamom powder mix well set side until required.

Step 2:Sugar syrup ingredients:
1/4 cup sugar
1/4 cup water

Procedure for sugar syrup:
Heat pan over medium heat add sugar and water bring it to a boil until you achieve one string consistency.Switch off the flame and set aside.

Step 3:Ingredients
6 Bread slices(brown or white)-Trim the edges of the bread slices and cut it into half  triangle or rectangle.Set aside
Ghee for shallow frying

Procedure:
-Heat a pan on medium flame add ghee and shallow fry all the bread slices and until golden brown and dip into the sugar syrup (step 2).And align it onto the serving plate or bowl.Add the cold milk prepared at (step 1) and garnish with almonds,pistachios.Enjoy.
