Potato Spinach Curry

Boiled Baby potatoes cooked in spinach gravy along with some Indian spices and topped up with fresh cream.Serve hot with steam rice,Indian flat breads(Roti, Naan , Kulcha). The joy of harvesting spinach from your own garden.IMG_5503

cook time 20mins
serves 3-4

Ingredients:
5oogm Spinach(wash,blanch.puree and set aside)
250gm steamed baby potato(skin removed and set aside)
1medium onion(finely chopped or pureed)
1medium tomato pureed
1Green chili finely chopped
1/2tsp garlic paste
1tsp cashew paste(Soak and blend with 5-6 cashews to fine paste)
1tsp fresh cream (optional) for garnish

For seasoning:
1tsp shahi paneer masala(I use this)
salt to taste

Procedure:
1)Heat oil on medium heat,add chopped onions,green chilli,garlic paste,salt.Sautee until translucent and add tomato mix well.
2)Cook until tomato and onion paste comes together.Then add masala,boiled potato,spinach puree mix well.


3)cook for 2-3 mins and switch off the stove.serve hot with steam rice,Indian flat breads(Roti,Naan,Kulcha).

Note:
-You can add chopped spinach at step (1) and  sautee it along with onions and make a spinach puree.Then go to step (3)
-you can avoid cream by adding few tsp of yogurt or cashew paste.
-You can use regular potato(Boil and cut into bite size cubes) if baby potato is unavailable.
-If you want to thicken the spinach puree add a tea spoon of chickpea flour.
