Onion Pakora (fritters) is a deep fried snack and popular street food made with Onions,chickpea flour and some spices.It is a wonderful tea time snack to entertain guests or just enjoy when it is raining.
2 onions thinly sliced
1 cup chickpea flour
3 green chilies finely chopped
1/2 tsp red chili powder
1 tsp cumin seeds
1tsp rice flour or corn flour(for crispy texture)
pinch of baking soda
1tsp clarified butter
oil for deep frying
1)In a large bowl add thinly sliced onions, green chilies, red chili powder, salt, cumin seeds.Mix everything together allow it to rest for 5 mins.
2)Then add chickpea flour, rice flour and mix well without adding water.Until onions are coated and add few drop of water if needed.
3)Heat oil for frying and once the oil is hot enough then take small portion of mixture in hand or by spoon and drop 3-4 small fritters into the oil.
4)Deep fry until it turns golden brown.Keep stirring ocassionally until they cook evenly.
5)Drain any excess oil and place the fritters on a paper towel to remove any excess oil. Repeat the process for rest of the mixture.
Allow onions rest in salt& other spices for 5 mins allows it to release moisture that helps to bind flour.
-Add appoximately 1/4 cup of water if required for preparing the dough; too much water will make the fritters oily.
-Do not overcrowd fritters in oil they will not cook evenly and become soggy.
