Quinoa cooked with spicy mint sauce and steam vegetables along with dash of garam masala. It is healthy,flavorful and delicious one pot meal.It can be accompanied with plain yogurt or cucumber yogurt.

For Mint sauce:
1/2 cup fresh chopped mint
1 medium onion
2 dry red chili or green chili (optional if you don’t want it to be spicy)
2 garlic cloves
-In a food processor add all the ingredients and give it a pulse to make a coarse paste and set aside.
salt to taste
1/2 tsp garam masala
1tsp olive oil or coconut oil
2 potato peeled and chopped
5-6 cauliflower or brocoli florets(optional)
1 medium carrot finely chopped
1/4 cup peas
1 cup cooked quinoa
Cooking instructions for Quinoa:
-In a pan add 1 part quinoa with 2 parts water and cook it on medium to low heat covered.It will around 15-20 mins.
-Heat oil in a pan and add the mint sauce saute for few minutes and then add chopped vegetables,salt.
-Add little water and cook it covered until the vegetables are soft on a medium to low heat.
-Add garam masala and cooked Quinoa mix thoroughly.
-Swtich off the stove and serve hot with yogurt.
-left over quinoa works great for this recipe.
-Chopping vegetables finely allows them to cook faster.
-you can add beetroot, corn ,edamame instead of potato. feel free to replace according to your taste.
-You can follow the same recipe with Brown rice, white rice as well.
