Vegetable cutlet

Vegetable cutlets is a versatile crispy evening snack it is prepared with  a combination of boiled/steamed  root vegetables along with Indian spices then rolled in breadcrumbs and shallow fry for a crispy texture. I made this for super bowl game night snack.

Makes 10 to 12

Ingredients:
1 Cup Steamed or boiled vegetables(Potato, Carrot, Peas and Beetroot)
1 medium onion finely chopped
2 green chilies finely chopped
1tsp finely chopped cilantro(Optional)

For Seasonings:
1tbsp Garam masala
1tsp red chili powder(optional)
pinch of turmeric
salt to taste
oil to fry

For Coating Cutlets:
1tbsp of corn starch or all purpose flour (Mix 2 to 3 tbsp.. of water with corn starch and set aside)

1/2 cup of homemade breadcrumbs(slice the bread into small pieces and toss it in the microwave or toaster until they are crispy and blend it into little coarse to fine powder)img_4445

Procedure:
1)Steam/boil the vegetables and make sure there is no excess moisture. Mash the vegetables and set aside.
2)Heat a pan with oil and add finely chopped onions, turmeric, green chilies,salt and cook until onions are translucent.
3)Then add all rest of the seasonings garam masala, red chili powder mix well and add the mashed vegetables mix thoroughly.
4)Transfer it into a bowl and allow it to cool completely.
5)Then divide the vegetable mixture into equal portions and  make your desired shape(heart shape, circle or elliptical) with the mixture. I made elliptical shape.
6)Dip one of the elliptical shape cutlet into the cornstarch mixture and then into the breadcrumbs coat well and set aside to fry.
follow the procedure for rest of the mixture.
7)Heat oil for frying and fry until they turn golden brown. Serve hot with tamarind chutney or Tomato ketchup.
