Ridge Gourd chutney

Ridge Gourd chutney is made by peeling the skin of the ridge gourd which is edible and high in fibre.It is prepared by sautéing ridge gourd peel in oil until they are wilted along with tamarind, salt and turmeric. This chutney goes well with Steamed rice, Idly, Uttapam and  Dosa.

Prep time:5 mins
cook time:5-8 mins

Ingredients:
4-5 Ridge gourd skin peel
1 Small ridge gourd
Dime size tamarind(deseeded)
Pinch of turmeric
Salt to taste
1tsp oil

For Seasoning:
3-4 Red chilies
1tbsp urad dal
1tsp mustard seeds
pinch of asafetida( hing)

Procedure:
1)Heat a pan with oil on a medium flame then add the ridge gourd peel sautee them until they are wilted along with tamarind, salt and turmeric.
2)Set a side and allow it to cool.
3)Heat a pan with few drops of oil on a medium flame and sautee all the seasoning until they turn golden brown.
4)In a blender add everything and make it into a coarse paste then transfer into a bowl.Serve with Steamed Rice,Dosa,Idly and uttapam.img_4144
