Roasted Edamame is great protein packed healthy snack and swap for chips.You can snack on it or add to your salads.

Cook time: 35-40 mins
1 Cup Frozen edamame(Thaw and pat dry)
1 tsp Roasted Cumin powder
1 tsp Roasted Coriander powder
1 tsp Red Chili powder
1 tbsp Extra virgin coconut oil(melt it in a microwave for a minute)
Salt to taste
1.On a cookie tray spread a clean dish towel and gently pat with another dish towel to dry them.
2.In a mixing bowl ,toss edamame with coconut oil,cumin powder,coriander powder,red chili powder and salt.
3.Heat a pan on a medium flame and add the edamame mixture roast them until they are crispy.
4.Allow them to cool and transfer it into an air tight container.
-I usually consume them with 3-4 days.
-You can bake it in oven at 375(F) for 35-40 mins.Stir them occasionally every 5-10 mins to bake them on both the sides.
-If edamame unavailable use Peas or chickpeas or black eye beans.
