Vegetable Samosa

We had guests over this weekend and i made vegetable samosa.They were very tasty bursting with flavors and melting in the mouth.It is a spicy potato filling wrap into a pastry and deep fried or baked until they are crispy.Serve hot with some green chutney or tamarind date chutney or tomato ketchup.

Yields:10-12 samosa’s

Ingredients for dough:

1 cup all purpose flour
2 tbsp clarified butter or melt some unsalted butter
1 tbsp carom seeds
salt to taste
oil to deep fry
water

Procedure for dough:
1.In a large bowl add all the ingredients for the making the dough.Add water slowly  to make a firm dough. Cover in a plastic wrap and set aside.

Ingredients for potato filling:

3 Medium size potato boiled and mashed
Pinch of turmeric
Salt to taste
1 tbsp Cumin seeds
1 tbsp Red chili flakes
1 tbsp Shredded ginger
1 tbsp dry roasted coriander seeds


1 tbsp roasted dry pomegranate seeds(optional)
1 tbsp Garam Masala
1/2 tsp Red chili powder
1 tsp Oil

Procedure:
1.Heat a pan on a medium flame add oil cumin seeds,red chili flakes,shredded ginger and fry until they are golden brown.


2.Then add boiled/mashed potato,turmeric,salt,coriander seeds powder,red chili powder,garam masala and salt.Mix thoroughly and transfer into a bowl set aside.


3.Divide the dough into 10 to 12 equal parts.Roll each part into a ball and roll out into a circle .Divide the circle into two parts with a knife.


4.Brush the edges with little water and form a cone shape and seal the dampened edges.
5.Fill the cone with the  1 to 2 tsp of potato mixture and press the two dampened edges together.similarly make the rest of the pieces and deep fry them on a medium flame until they are crispy and brown.Take out and drain on a paper towel to remove any excess oil.

 

Notes:
-Add roasted pomegranate seeds powder for extra tart flavor.
