Cabbage carrot curry

I had a left over half a piece of cabbage and couple of carrot without thinking much i started to chop the cabbage,peeled and diced the carrots ,a potato to make this ridiculously simple and easy curry for my pulka.

Time 25 minutes

Ingredients:

1/2 Cabbage (Roughly chopped)
3 Carrots chopped
1 slit green chili(optional)
1 string of curry leaves
1 inch ginger diced
1 onion diced
1 small aloo/potato diced
1/2 cup green beans diced
1 tomato diced

For seasoning:
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1 tsp oil
pinch of asafetida
For spice powder:
Pinch of turmeric
salt to taste
1/2 tsp of garam masala
1/2 tsp amchur powder
Procedure:

  • Heat oil in a pan add mustard seeds,cumin seeds and allow them to splutter.Then add hing,ginger,green chilli,curry leaves,onions and fry for 2 min,
  • Now add the aloo,beans,carrot,cabbage,tomato,garam masala,amchur powder.cook till the vegetables are soft and tender.
  • Serve hot with roti,rice.
