Easy Vegetable pulav

Vegetable Pulav is the prepared with rice ,variety of vegetables and seasoned with Indian spices.It is a quick and easy delicious one pot meal for lunch or dinner.

Makes 4

Time 20 Minutes

Ingredients

1 Cup Basmati rice

2 cups Water

1/2 Onion sliced

1/4 cup Diced Potatoes

1/4 cup Diced carrot

1/4 cup Diced beetroot

1/2 cup Finely chopped cliantro and mint leaves

1 Bay leaf

2 Cloves

2 Cinnamon sticks

1 tbsp Cumin seeds

1 tbsp Oil

1 tbsp Ginger chilli paste

1 Garlic pod minced

1/2 tbsp Garam masala

Salt to taste

Procedure

  • Heat a pressure cooker with oil and add bay leaf, cumin seeds,cloves,cinnamon stick allow them to splutter.
  • Then add ginger chilli paste,garlic,finely chopped mint,cilantro fry for a minute.
  • Now add the onions,potatoes,carrots,beetroot ,rice,garam masala,salt and saute for 5-10 min.
  • Finally add water ,close the lid and cook for 2-3 whistles.
  • Serve hot with raita.

Notes:

  • If you don’t have a pressure cooker you can cook it on a stove top.But it will take longer approximately(30-40 mins).
